Statera, an acclaimed fine-dining establishment in Lima, Peru, was renowned for its innovative Peruvian-Greek cuisine under the helm of Chef André Patsias. Opened in 2018 in the affluent Miraflores neighborhood, Statera, meaning 'equilibrium' in Latin, centered its culinary philosophy on Peru's rich biodiversity, showcasing lesser-known ingredients from the coast, Andes, and Amazon rainforest. The intimate restaurant, originally designed by MD27 Architects, was celebrated for its harmonious blend of international experience and Peruvian heritage, offering a unique gastronomic journey that explored distinct flavors and textures.

Chef Patsias, with experience from world-renowned kitchens like Noma and Quique D'acosta, conceptualized a menu that emphasized earth, nature, and sustainability, often featuring dishes that combined ingredients in unconventional ways. Statera garnered recognition, including 5 radishes and a spot in the TOP 100 of the Best Vegetable Restaurants in the World by We're Smart World. However, Statera is now permanently closed. Its former location at Av. Mariscal La Mar 463 is currently occupied by AWA Restaurante.
