13 Fronteras in Buenos Aires, Argentina, was a Michelin-recommended Latin American fusion restaurant renowned for its innovative cuisine and immersive dining experience. Helmed by Chef Dave Soady, the restaurant drew inspiration from his expansive 16,000-kilometer journey through 13 countries from Washington D.C. to Argentina, translating these diverse cultural and culinary encounters into a unique menu. The ambiance was intimate and interactive, featuring a long Guayubira wood bar where guests could engage directly with the chef as he crafted sculptural and story-driven dishes.

Soadi's culinary philosophy emphasized creativity and a near-zero-waste approach, utilizing non-traditional ingredients and fermentation techniques to reinterpret classic Latin American flavors with a modern twist. Signature dishes, often presented as edible narratives, transported diners across the continent through unexpected combinations and artistic plating. The restaurant was particularly celebrated for its tasting menu format, which encouraged exploration of various small plates.

Please note: 13 Fronteras in Buenos Aires permanently closed its doors on August 7, 2024. Chef Dave Soady plans to launch a new concept, Cojute x 13 Fronteras, in Asunción, Paraguay, in late October 2024, and will be hosting pop-up events in various locations prior to the new opening.
